We love baked potatoes. But potatoes are not legal on the Specific Carbohydrate Diet and they are not SIBO friendly. However, baked potatoes are easy to make during a long, exhausting week and with all of the possible variations they can be very inexpensive. If we could have baked potatoes every week, we would, so we decided to make a SIBO friendly version: Loaded Baked Squash.
Loaded Baked Squash
Ingredients
- 2 small acorn squash- or other small varieties
- 1 pound hamburger
- 1 Tbs dried sage
- 1 Tbs olive oil or other high heat oil
- Salt and pepper to taste
Instructions

Cut the squash in half. Scoop out the seeds with a spoon. Wrap each half individually in foil and bake at 350 degrees F for 1 hour or until the meat of the squash is soft.

Place 1 Tbs of oil into a skillet and warm.

Add the hamburger and cook until browned. Add the sage, and let cook for 1 minute, stirring to incorporate. Add salt and pepper to taste if desired.

When the squash is cooked, scoop the seasoned cooked meat on top, and sprinkle shredded cheese.

If desired, place back in the oven to melt the cheese. Add yogurt and any other desired toppings just before serving.
