
Simple and easy meals are my go-to for lunches or dinners when I am just cooking for myself. I often find these meals are either quick soups or simple salads. When I make meals for my family, I often make enough meat to have two meals so lunch the following day is easy. Roasted chicken is one of my favorites.
Easy meals during the week are convenient so I can spend time on other prioritized tasks. This Simple Salad is so satisfying. It is easy, a little bit sweet, and full of good fats, proteins, and flavors. If you are needing more calories and are at a place in your journey where you tolerate white jasmine rice, serve this salad over 1/4 to 1/2 cup of cooked rice. The dressing will drizzle down into the rice adding flavor.

Simple Salad
Ingredients
Salad
- 1/2 cup roasted chicken
- 1 small orange (peeled)
- 1/4 cup toasted nuts
- 1 cup chopped lettuce
- 1-2 Tbs sliced scallions green part only
Dressing
- 1/2 lemon
- 1/4 cup walnut oil
- 1/4 cup apple cider vinegar
- 1/2 Tbs clear, runny honey
- 2 pinches salt
Instructions
Salad
Place the lettuce into a bowl or on a plate.
Decorate the lettuce with the roasted chicken, toasted nuts, orange and scallions.
Dressing
Juice the lemon and place the juice into jar or bowl.
Add the walnut oil, apple cider vinegar, honey, and salt.
Mix well. The honey may take a minute or two to dissolve.
Add as much dressing as you like to your salad, there will be plenty for leftovers.
