Isn’t Strawberry Lemonade the epitome of summer?
As the sunshine continues to make its presence known and strawberry season continues in the Rocky Mountains we find ourselves enjoying these bright berries at every turn. For family dinner with a dear friend last week, we enjoyed this cheerfully refreshing Strawberry Lemonade. The boys of course spiked theirs with vodka (my husband says bourbon would have been a more flavorful choice), but either are SIBO-safe according to the SIBO Specific Food Guide.
This SIBO-safe Strawberry Lemonade is the perfect drink to serve at a picnic or backyard barbecue with friends and family on a hot summer day. No need to tell anyone it is complaint with a super-strict diet… they will never know!
Strawberry Lemonade
Ingredients
- 4 cups cold water (divided)
- 1/4 cup honey
- 1 cup fresh squeezed lemon juice (about 6 lemons)
- 3 cups fresh strawberries
- 2 cups ice
- extra lemons and strawberries
Instructions

Place 1 cup of water into a pan and bring to a boil. Once boiling, set aside while your squeeze the lemons.

Wash the strawberries and remove the tops.

Place the strawberries into a blender with 1 cup of cold water. Blend on low or medium low until the strawberries become broken up.

Strain the blended strawberries to remove seeds and large pieces. This should produce about 1.5 cups of strawberry juice/puree.

Add the honey to the hot water and whisk until it dissolves. This is called a honey simple syrup. Set aside and let it cool to the touch.

In a large pitcher pour the strawberry juice, and lemon juice. Mix well.

Add the honey simple syrup and mix well.

Add the remaining 2 cups of water and mix.

Add the ice and extra chopped strawberries and lemons to make the lemonade look fancy and luscious.

Serve over ice. Makes at least 8 servings.
