This Strawberry Milkshake Smoothie comes out of my smoothie ebook. I wanted to share a glimpse of my ebook with you but also share one of my favorite recipes for the early summer.
It is officially strawberry season here.
Unlike California where strawberries grow almost year around, up here in the Rocky Mountains they grow in May and ripen in June and July… that’s it. So sweet, fresh tasting strawberries are quite the treat. The best part of strawberries in these mountains is tracking down the wild ones. Of course you can grow plenty in your garden but they also grow wild in the mountain forests. It is a marvelous delight to run into the little berry bushes and if you are lucky, you get to pick a strawberry before one of the small animals or bears have found them. And if you are crazy lucky you might even find a true alpine strawberry which grows white flesh instead of bright red. They are quite the wild wonder. The wild strawberries are far sweeter than anything I have ever found in the store with a flavor so deliberate and sweet a store strawberry tastes a bit like straw.
With strawberry season upon us, I find myself slicing the bright berries into fruit salad, topping them with yogurt and pecans and eating them with dessert. Sometimes I just sneak a few out of the fridge to add to a meal.
During the summer this Strawberry Milkshake Smoothie is plenty sweet on its own, but if you are using strawberries that were frozen from the store adding a sweetener will make it taste like a milkshake. And if you tolerate more berries than just 1/2 cup you can add even more.

Strawberry Milkshake Smoothie
Ingredients
- 1/2 cup frozen strawberries
- 3/4 cup 24-hour or lactose-free yogurt
- 20 raw macadamia nuts
- 1 whole vanilla bean
- 1-2 Tbs honey (or sweetener of choice)
- 3-4 ice cubes
- 1/4-1/2 cup water (if desired)
Instructions

Place the strawberries, yogurt and macadamia nuts into a high-powered blender.

Slice the vanilla bean down the length of the bean and with the backside of your knife scrape out the seeds.

Place the vanilla bean seeds into the blender.

Add the honey and ice cubes to the blender.

Blend on the smoothie setting. Add water if desired for a thinner smoothie.

Serve and enjoy.
