Breakfast Hash
Ingredients
  • 2 cups roasted vegetables
  • 1 pound ground pork
  • 6 slices of bacon no sugar
  • 2 Tbs ground sage
  • 2 tsp smoked paprika
  • 2 leaves large chard
  • 4 sprigs of oregano
  • 4 eggs
  • 1 Tbs olive oil + oil for frying the eggs
  • salt to taste if desired
Instructions
  1. Chop the bacon into small pieces.
  2. Place the oil into a medium sized pan. Add the ground pork and chopped bacon and ground sage. Cook over medium heat until the meat is browned.
  3. Add the smoked paprika and mix to cover the meat evenly.
  4. Chop the chard into one inch pieces, chopping the stem into 1/4 inch pieces. Add the chard to the meat mixture.
  5. If the roasted vegetables are not cut into bite sized pieces, do this now.
  6. Remove the oregano leaves from the stems. Mince the leaves and add it to the meat and chard mixture. Add the roasted vegetables. Let everything heat until it is hot. Add salt to taste, if desired.
  7. Fry four eggs and place on top.
  8. Serve.
  9. Add cheese or SIBO friendly hot sauce if you would like.
