Orange Chai Shortbread
Ingredients
  • 2 cups almond flour
  • 1/4 tsp Himalayan pink salt
  • 1/4 tsp ground cardamom
  • 1/4 tsp ground fennel
  • 1/2 tsp ground ginger
  • 1/2 tsp ground cinnamon, plus more for garnish
  • 1/4 cup coconut oil, melted
  • 1/3 cup honey
  • 2 tsp grated orange zest
  • 1 tsp vanilla extract
Instructions
  1. Preheat the oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper.  

  2. In a large bowl, whisk together the flour, salt, and spices. In a medium, whisk the coconut oil, honey, orange zest, and vanilla. A little at a time, add the dry ingredients to the wet, stirring until a dough forms.

  3. Place the dough between two pieces of parchment paper and roll it about 1/8 inch thick. Remove the top piece of paper and, using a 2-inch round cookie cutter, cut the dough into circles and place on the prepared baking sheet. bake for 9 to 10 minutes, until the edges begin turning golden brown. Transfer the cookies to a rack to cool completely.
