Place the vegetables onto a baking sheet.

Drizzle the vegetables with olive oil.

Sprinkle with the minced herbs and salt.

Using your hands or a large spoon, toss the vegetables so they are evenly covered with the oil, herbs, and salt.

Place into the oven and bake for 35 minutes or until the vegetables are easy to pierce with a fork.
