Roasted Vegetables
Ingredients
  • 2 small zucchini
  • 4 medium carrots
  • 4 rutabagas
  • 1 Tbs fresh minced sage
  • 2 Tbs fresh minced rosemary
  • 2 Tbs fresh minced thyme
  • 2 Tbs olive oil
  • 2 pinches of salt
Instructions
  1. Preheat the oven to 425 degrees Fahrenheit.
  2. Chop the zucchini into one inch pieces.
  3. Chop the carrots into 3/4 inch pieces.
  4. Chop the rutabaga into small 3/4 inch pieces.
  5. Place the vegetables onto a baking sheet.
  6. Drizzle the vegetables with olive oil.
  7. Sprinkle with the minced herbs and salt.
  8. Using your hands or a large spoon, toss the vegetables so they are evenly covered with the oil, herbs, and salt.
  9. Place into the oven and bake for 35 minutes or until the vegetables are easy to pierce with a fork.
  10. Remove and serve.
