Over the last few years, while on a diet to help with SIBO symptoms, holiday meals have become stressful and my least favorite events of the year.
It is SO hard to attend family feasts when I have to make a separate meal for myself or I find my old favorites on the table but know they will cause horrifying symptoms.
This roasted vegetable dish is an easy way to add a SIBO-safe side dish to any feast. As long as you have the space for it to bake in the oven, this roasted vegetable recipe is easy and quick to prepare and won’t take much energy to ensure you have food you can dig into.
Roasted Vegetables
Ingredients
- 2 small zucchini
- 4 medium carrots
- 4 rutabagas
- 1 Tbs fresh minced sage
- 2 Tbs fresh minced rosemary
- 2 Tbs fresh minced thyme
- 2 Tbs olive oil
- 2 pinches of salt
Instructions

Preheat the oven to 425 degrees Fahrenheit.

Chop the zucchini into one inch pieces.

Chop the carrots into 3/4 inch pieces.

Chop the rutabaga into small 3/4 inch pieces.

Place the vegetables onto a baking sheet.

Drizzle the vegetables with olive oil.

Sprinkle with the minced herbs and salt.

Using your hands or a large spoon, toss the vegetables so they are evenly covered with the oil, herbs, and salt.

Place into the oven and bake for 35 minutes or until the vegetables are easy to pierce with a fork.

Remove and serve.

I am very new to the SIBO game. Do I specifically have to use coconut flour for recipes or can I use an all purpose gluten free flour? Can I use dried herbs instead of fresh? Thank you!

Yes, you do have to use coconut flour for the recipes that call for it. Coconut flour behaves in a very unique way and substitutions will cause the recipe to fail. Most “all purpose Gluten Free flours” are considered unsafe for SIBO and are not allowed on the SIBO diets.
You can absolutely substitute dried herbs for fresh!
