Pancakes
Ingredients
  • 6 eggs
  • 1/3 cup coconut oil/melted butter
  • 1 1/2 cups almond flour firmly packed
  • 1/2 teaspoon baking soda
  • 1/3 cup coconut milk (no thickeners or fillers)
  • 1 teaspoon vanilla
  • dash of salt
  • 1 tablespoon honey
  • 1 teaspoon apple cider vinegar
Instructions
  1. Combine all ingredients expect vinegar in blender. Blend on high until smooth.
  2. Add vinegar and blend.
  3. Preheat pan with a little bit of coconut oil or butter.
  4. Cook pancakes on low-medium heat, adjusting if necessary.
Recipe Notes

The original recipe says it makes 14-16 pancakes. Try making a bunch of really small pancakes so you can stack them high and feel like you are eating a lot more of them.
