“Oh My Goodness!!!!!!!! Pancakes!!!!!!”
That is what went through my head the ENTIRE time I made this recipe… and ate them… and took pictures… and ate more of them! And YES! I ate those pancakes in that picture while I was running the photo through minor edits.
This is hands down the best pancake recipe I have found yet. It comes from our friend Michelle, at Gluten Free Fix. If you put these pancakes side by side with wheat pancakes the SIBO friendly version would be slightly eggy. HOWEVER! If you have been trying grain-free pancake recipes to no avail for the last two years then you will love this recipe! And the texture will feel like pancakes!
Serve smothered in butter and puddled with honey. (Okay, keep your honey puddle to two tablespoons so you don’t over do it and give yourself symptoms…)
This recipe is heavy on the almond flour. This means if you want to stick to a SIBO Specific-Low FODMAP you will want to restrict your serving to only one pancake. A great treat, but not actually a meal.
Pancakes
Ingredients
- 6 eggs
- 1/3 cup coconut oil/melted butter
- 1 1/2 cups almond flour firmly packed
- 1/2 teaspoon baking soda
- 1/3 cup coconut milk (no thickeners or fillers)
- 1 teaspoon vanilla
- dash of salt
- 1 tablespoon honey
- 1 teaspoon apple cider vinegar
Instructions

Combine all ingredients expect vinegar in blender. Blend on high until smooth.

Add vinegar and blend.

Preheat pan with a little bit of coconut oil or butter.

Cook pancakes on low-medium heat, adjusting if necessary.
Recipe Notes
The original recipe says it makes 14-16 pancakes. Try making a bunch of really small pancakes so you can stack them high and feel like you are eating a lot more of them.

I use organic Natural Value Coconut Milk. When I use the full fat version I often water it down by half.

Hi, these look delicious! Quick question, I’m a bit confused as everywhere I look says to avoid honey if you have SIBO and vinegar.

I am not sure where you are looking… The only two diets designed for SIBO by SIBO experts allow both honey and apple cider vinegar… check out the SIBO Specific Food Guide by Dr. Allison Siebecker, and the Bi-Phasic Diet by Dr. Nirala Jacobi. You can also read my post called “SIBO and Honey” for way more information. The recipe for these pancakes follow the SCD diet and the GAPS diet which are also used by experts to treat SIBO, both diets allow honey and vinegar.
