Hamburger Veggie Scramble

Ingredients
  • 3 eggs
  • 1/3 cup cooked hamburger
  • 1 cup fresh greens (kale, chard, beet greens)
  • 1 tsp unsalted butter
  • 1 sprinkle grated aged cheese of choice
  • 1 pinch fennel seed
Instructions
  1. Wash and chop the fresh greens into small pieces.

  2. Place the butter in a seasoned cast iron pan and heat on medium high until it melts.

  3. Add the greens, hamburger and fennel seed. Cook until the greens begin to wilt. 

  4. While the greens are cooking, crack the eggs into a small bowl and whisk with a fork. Discard the egg shells.

  5. Add the whisked eggs to the greens and very gently mix with a fork in a figure eight to scramble the eggs while they cook.

  6. Once the eggs have cooked, quickly sprinkle with cheese and move to a plate to serve. 

  7. Sprinkle with salt or pepper if desired. 

Recipe Notes

Garnish with a sprinkle of fresh chives, herbs, or tolerated hot sauce.
