Fall is our busy time of year. Work ramps up to full capacity, local harvests and hunting seasons are in full swing and the fall schedule picks back up. Even though I don’t have SIBO anymore I never like to be out and about when my body reaches empty. During the summer I prefer light meals but when the temperatures start dropping and the schedule speeds up I like to start my day with a solid meal. Perhaps that is my mother’s doing as when I was a child she always made me eat protein before I went off to school and always made sure I had a snack. While I still keep a snack in my car and bag at all times I hate being forced to make a decision between a planned meal and an impromptu meal away from home. So, this Hamburger Veggie Scramble is my go-to breakfast when I need to get through a long day or I am not sure what time my next meal will be.
Fresh greens are easy to grab and chop up and I will often use meat left over from dinner the night before. This recipe is fast and easy and provides great protein and nourishment for hours.

Hamburger Veggie Scramble
Ingredients
- 3 eggs
- 1/3 cup cooked hamburger
- 1 cup fresh greens (kale, chard, beet greens)
- 1 tsp unsalted butter
- 1 sprinkle grated aged cheese of choice
- 1 pinch fennel seed
Instructions

Wash and chop the fresh greens into small pieces.

Place the butter in a seasoned cast iron pan and heat on medium high until it melts.

Add the greens, hamburger and fennel seed. Cook until the greens begin to wilt.

While the greens are cooking, crack the eggs into a small bowl and whisk with a fork. Discard the egg shells.

Add the whisked eggs to the greens and very gently mix with a fork in a figure eight to scramble the eggs while they cook.

Once the eggs have cooked, quickly sprinkle with cheese and move to a plate to serve.

Sprinkle with salt or pepper if desired.
Recipe Notes
Garnish with a sprinkle of fresh chives, herbs, or tolerated hot sauce.
