A friend of mine made this Apple Cinnamon Muffin recipe just for me for a Sunday brunch. The brunch was beautiful with the apple muffins, a tomato- mushroom-cheese frittata, fruit salad, homemade yogurt, and lots and lots of honey-cured bacon. It was the perfect way to bring two families together for a nourishing, kid-approved, and SIBO friendly meal. With the echo of my friend’s little boy’s voice excitedly demanding, “More cake! More cake!” in my ears, I thought it was a recipe worth sharing.

***As with all of the recipes posted on Journey Through SIBO, this recipe will depend on your individual tolerance. Please only make food for yourself that is good for you! This SCD and GAPS friendly recipe does have large amount of almond flour and apple, making this recipe a moderate to high FODMAP food, even for just one muffin. It is a wonderful treat, but depending on your individual tolerance or specific diet, this recipe might need to wait until you are a few months into recovery from SIBO. Remember to limit your meals to one moderate FODMAP food item per meal if you are following the SIBO Specific Food Guide.
This is also a really great transition recipe if you have chosen to slowly transition away from the Standard American Diet to a low carbohydrate SIBO-friendly diet or going from SIBO Specific to adding foods back in after symptoms have been gone for some time.
Apple Cinnamon Muffins
Ingredients
- 2 1/2 cups almond flour
- 1/2 tsp sea salt
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1 1/2 medium or 2 small apples diced
- 3 eggs
- 1/3 cup coconut oil
- 1/2 cup honey
- 1 Tbs vanilla
Instructions

Place the dry ingredients in a bowl and whisk together.

Core and peel the apple. Dice the apple into small bits.

Add the wet ingredients to the dry and mix together.

Add the apple and mix until incorporated.

Scoop the batter into a parchment lined muffin pan.

Place into a preheated over and bake for 25 minutes at 350 degrees.
