With the solar eclipse looming and our travel plans constantly changing, my husband and I decided on a spontaneous hike to the top of Mount Blackmore in Montana to watch the solar eclipse. With this last minute decision the night before and wanting to reserve as much energy as I could for our 12 mile hike I put together a day’s worth of SIBO friendly foods for the trail in 20 minutes. Blueberry Trail Mix
Ingredients
- 10 pecan halves
- 10 hazelnuts
- 20 macadamia nuts
- 1/4 cup dried blueberries (no sugars added)
Instructions

Place all of the ingredients into a wax paper bag or ziplock bag. And gently mix the ingredients.
